Pancake Tuesday is coming up, which never fails to get Irish people excited. We don’t need an excuse to eat pancakes and even tastier if they are covered with chocolate and all sort of sugary treats.

Although Pancake Tuesday should be a fun and social event, it can leave some people worried that they are going to blow their healthy eating efforts if they get involved. The average pancake with toppings could range anywhere from 500-800 calories, depending on what your topping of choice is. For most people it’s a once-off event which won’t rock the boat too much, but for others it can bring on feelings of food anxiety.  

Neither healthy eating nor achieving your goals are about avoiding foods. It is about finding a way to still take part in social events, such as Pancake Tuesday, in a way that still helps you to reach your health goals.

So, for the health conscious among you, here is a super easy, tasty and healthy recipe for pancakes which you can enjoy any day of the week!

The recipe is only 300 calories, low in fat, high in protein and ideal as part of a healthy diet. Serve with some Greek yoghurt, fruit and honey and you won’t feel deprived this Pancake Tuesday. Enjoy!

Walnut, Blueberry And Oat Pancakes 

(serves one portion, suitable to scale up for larger portions)

Ingredients: 

  • 40g oats 

  • 1 large egg 

  • 1 tbsp. walnuts 

  • 1 cup blueberries 

  • 1 tbsp. honey

  • ½ tsp. baking soda 

  • 4-5 sprays light spray oil 

 

Method 

  1. Crack the egg into a blender. Add oats and baking powder and blend well. 

  2. When the batter is a smooth and creamy consistency, pour it into a bowl and stir through the blueberries. Put in the fridge for 10-15 mins to allow it to thicken. 

  3. Spray the oil onto a non-stick pan and place on a medium heat. 

  4. Add the batter to pan in circular shape. It’s up to you whether you want to make 1 large pancake or multiple mini pancakes, depending on your preference. 

  5. Allow the mix to cook for 4-5 mins and flip to cook the under side, until golden brown. 

  6. Place the chopped walnuts on top of pancake and place under a preheated grill for 4-5 mins to toast the nuts.

  7. Transfer your pancake onto a plate, topping with a drizzle of honey and remaining blueberries. 

Best served hot!
