Egg and Salmon Sambo: Calories 210
This is a protein packed start to the day that only takes about 15 minutes to prepare and will help you to power through until lunch time.
Ingredients: 2 large egg whites beaten, 1 slice of smoked salmon, 1 slice tomato, 1 tablespoon chopped red onion, 1 whole wheat English muffin toasted, ½ teaspoon extra virgin olive oil
Heat oil on non-stick pan, add onion to hot pan, stir 1 minute
Add beaten egg whites, stirring until eggs set (30 seconds)
Add smoked salmon, tomato, eggs and onion to toasted muffin to make sandwich
Healthy breakfast idea 2
Berry Delight: Calories 174
This is the perfect healthy breakfast idea if you are in a bit of a rush in the morning as it only takes a few minutes.
Ingredients: 1 x 125g fat free yoghurt, ½ cup reduced fat cottage cheese, ½ cup blueberries, ½ cup cut strawberries, 2 tablespoons ‘no added sugar’ granola, 1tsp crushed walnuts/almonds.
Method: mix all together in a bowl and enjoy, simple as!
